Queso Relleno (Stuffed Cheese)

Receta de Queso Relleno

Basic Ingredients:

- 1 Dutch cheese ball (Queso de Bola)
- Oil
- ¾ kilo ground pork

Ingredients for the filling:

- 1 Onion, chopped
- 1 clove garlic
- 4 tablespoons butter
- 1 red pepper chopped
- ½ tsp cinnamon powder
- Salt and pepper to tasted
- ¼ cup vinegar
- 50 grams of Olives
- 50 grams of Raisins
- 3 tablespoons of capers
- 400 grams of tomatoes
- 3 boiled eggs chopped

Ingredients to prepare tomato sauce

½ kilo of tomatoes
½ onion
1 xcatik pepper
Oil
Epazote
2 teaspoons of broth
salt to taste

Preparation

Scrape out the interior of the cheese ball to add the filling/stuffing.
To make the cheese filling:
Heat the butter, fry the onion, then add the garlic, sweet peppers, meat, and then all the rest of the ingredients.
Fill the cheese with the mixture, and cover with a cloth, and steam cook it so that the cheese becomes soft.
To prepare the white sauce:
Prepare chicken broth with bouillon powder; add epazote, olives and capers.
Separately, dilute the flour in a little water and add to the broth slowly while beating.
Add salt and a little oil. Keep on low flame.
To make the tomato sauce:
Liquefy the tomato with a little water, onion and pepper. Fry the mixture and add the epazote.
Season with broth and salt.
Boil uncovered over low heat, stir it until it thickens, about half an hour.
Prepare the plates and Serve: Serve at the table with two white sauces and tomato and cheese that you previously had taken from the cheese ball.
