A tradition in Yucatecan households every Monday is pork and bean stew, a traditional dish of Mexican cuisine. It's a very simple dish, but with a delicious taste. It consists of a combination of pork, black beans, epazote, and other spices. To add more flavour, it can be accompanied by chopped onion, radish, cilantro, and even local avocado, and of course, a rich chiltomate or habanero sauce. There are many beliefs around this delicious tradition. One of them says that it was born from the custom of slaughtering pigs on Saturdays, and due to the lack of refrigeration, it was necessary to salt the meat to preserve it, so it could be consumed on Mondays as a soup. Another belief is that this dish was reserved for slaves. Whatever the origin of pork and bean stew, the reality is that this is one of the favourite dishes of Yucatecans.
