Tobijoloch is a small tamalito wrapped in a corn husk, filled with pork and chicken meat. Its ingredients include salt, achiote, lard, onion, tomato, sweet pepper, cat chilli, garlic, and chicken seasoning. After cooking the chicken and pork meat, it is removed, and an adobo is made using the broth from the recently cooked meat, adding flour to thicken it. Once the adobo is cooked, the masa (dough) is mixed with salt and lard. The tamalitos are formed and wrapped in corn husks before being steamed or boiled. To enjoy them, they are served with a tomato and chilli tamulado sauce.
