Octopus is one of the most popular seafood dishes due to its texture and flavour, as well as its versatility for various dishes. Although there are different ways to prepare it, startled octopus has a peculiar preparation from which its name derives. To begin cooking the octopus, it is necessary to clean it with plenty of water and remove the viscera found in the head. Then, in a pot with boiling water, the octopus should be submerged for two seconds, always taking it by the head to prevent it from tearing. It is then taken out of the pot for three seconds, and the cycle of submerging and taking it out of the water is repeated three to six times before letting the octopus cook in the pot. During the process, you can see how the octopus contracts its tentacles, so that the octopus meat is soft when it is time to taste the dish. After this, the skin can be removed and it will be ready to plate.
