Atropellado" sweet pastries are a delight for all the sweet lovers. This dessert, shaped like an empanada, is prepared with a filling of sweet potato and coconut, which gives it the name "atropellado" (run over), as the sweet potatoes are mashed before being cooked. Sugar or piloncillo, cinnamon, and grated fresh coconut are added to the mashed sweet potatoes, giving it that coastal touch that characterizes them. This mixture is cooked over medium heat and will be ready to fill the pastries. The dessert is baked in the oven and finished off with a sprinkle of powdered sugar. It is very traditional to find them in homemade sweet shops along the Yucatan coast.
