They offer a panucho topped with escabeche stew, which can be made with octopus, shrimp, fish, or the traditional version. The protein is marinated with recado blanco (white seasoning) and grilled over charcoal. It is placed on a handmade tortilla that is filled with beans. The panucho is also garnished with pickled onions, xcatic chilli, bay leaves, oregano, and a traditional habanero chilli sauce.
