The sandwichón is one of the snacks that cannot be missing in the festivities of our state nowadays. It has conquered the palate of Yucatecans, originating in the municipality of Cansahcab, attributed to Mr. Petronilo Vázquez Madera (1900 - 1970). This delicious dish is made with long slices of bread, placed on top of each other, and filled between each layer with ham, cheese, and pâtés made from these same ingredients. Afterwards, it is covered with a mixture of cheese pâté made with cream or evaporated milk and garnished with peppers and peas on top. Currently, it has had several variations, adding more complementary ingredients, but its unique and characteristic flavour remains.
