The traditional cook, María del Rosario Pech, 58 years old, from Sinanché, San Crisanto, has gained prominence in this region of the state thanks to the invention of the dish "pavo lechón" (pork turkey). It was first prepared two years ago and achieved such success that she received orders for subsequent December dinners and parties. Now, she receives requests for all types of events. The main ingredients of this dish are "recado blanco" (a Yucatecan spice mix), sour orange, and wine. The meat used is a whole turkey and the pork skin, which gives the dish its name by combining these two proteins. For cooking, it is placed in a covered metal container and slow-cooked over wood fire for 12 hours. It is served on a plate with some of the broth it releases during cooking, or it can also be eaten in tacos, accompanied by "pico de gallo," guacamole, and habanero chilli.
