Octopus marinated in sour orange and charcoal grilled, as the name suggests "pok" meaning to toast or grill, and "chuc" meaning charcoal. It's essential that this dish is served with purple onion and tomato sauce, both of which are also grilled on the barbecue. This recipe has become famous during the season from August to December, which is when the Yucatecan octopus or better known as the Mayan octopus is obtained, perfect for this dish as it is a slightly smaller species, whose characteristics are well defined by its width, head, size, colour, and taste.
