The origin of Yucatecan marquesitas dates back to the city of Mérida in the 1930s when an ice cream vendor noticed a decrease in sales during the winter season. He decided to sell only the wafers, which are now known as marquesitas. They are a typical dessert of the region and consist of a kind of rolled-up crepe made from thin, hard, and crispy dough. It is evenly distributed on a round griddle and rolled once cooked. Marquesitas can be filled with various ingredients such as Edam cheese, hazelnut cream, fruits, among others. However, the restaurant El Manglar has innovated this delicacy as a dish. It is made from flour, butter, sugar, and the Yucatecan octopus as the main star. It is accompanied by Edam cheese, cajeta (caramel sauce), and sweet and sour fruit touches (strawberries, kiwi, banana, apple), creating a combination of flavours that will delight your palate.
