No. 280 Three-meat Puchero: Pork, Beef, and Chicken

The three-meat Puchero is a traditional dish from Yucatán, known for its wide variety of meats and immersed vegetables that give it a unique and distinctive flavour. The preparation of this dish takes approximately two hours. First, water is heated with salt, pepper, oregano, and Spanish seasoning. Then, onions, sweet peppers, xcatic peppers, and garlic are roasted and incorporated into the broth. Next, the vegetables, beef, and pork are cut into large cubes, while the chicken is divided into pieces. Once the water is boiling, the meats and vegetables are added at different times. The beef is added first, and fifteen minutes later, the pork, potatoes, corn, and carrots are added, removing the xcatic pepper to prevent it from breaking in the broth. Meanwhile, the rice that accompanies this dish is prepared by washing and sautéing it until it turns yellow, then added to the broth along with the Spanish seasoning and cilantro. After a few minutes, the second set of vegetables is added, including sweet potatoes, chayote, and pumpkin, followed by noodles and raisins. Finally, the broth is complemented with plantains and cabbage. This delicacy is served in a deep dish, accompanied by handmade corn tortillas, radish salad, chopped cilantro, and lime to taste.
