La Casa Palma is a food truck with a bonfire and restaurant service that has been blending Argentinean and Yucatecan cuisine for four years, aiming to pay homage to the state with its unparalleled wood-fired sourdough pizza. They use products sourced from Yucatán, such as chaya, harvested from their own garden; habanero-smoked longaniza, made by the cheesemaking company "Las Delicias de Tizimín"; and the caramelized recado negro crust, chosen because one of the owners' favorite dishes is Relleno Negro. As additional ingredients, it includes crispy beans and soft-boiled egg. All these ingredients allude to the most important meal in Yucatecan cuisine: breakfast, where eggs, beans, chaya, and longaniza cannot be missed.
