The restaurant "La Picuda" has combined one of the traditional dishes of the state with the charm of the sea, presenting the "Seafood Stuffed Cheese." It is made with Edam cheese, seafood (shrimp, octopus, small clams), flour, epazote (herb), raisins, olives, capers, tomato, onion, sweet pepper, and salt. The process involves melting the Edam cheese while boiling the seafood in a pot with onion, tomato, chilli, sour cream, and salt until it boils. Then, the "k'óol" is prepared with broth, sweet pepper, and fried epazote with lard, followed by gradually adding flour until it reaches a dense consistency. Finally, the tomatoes are boiled, blended, and fried with chilli and onion in a pan. This mixture is added to the pot with the other ingredients and cooked for a few minutes.
