The traditional cook Dulce María Pat Xuluc from Valladolid, better known as Doña Coti, has been dedicated to Yucatecan traditional cuisine for over 35 years. She learned from her parents, from whom she inherited the family's culinary expertise, as they had a place selling the most traditional dishes of the region, such as panuchos, salbutes, chalupas, empanadas, broths, and soups. She is now the one continuing the family business at her current restaurant called "La Selva," where she continues to sell these local delicacies, along with others that have been added, such as lomito tostadas, sopes, and her now renowned "La Selva soup." Among the dishes that she stands out for as a traditional cook is the escabeche, which she also prepares in panuchos and other snacks.
