A self-taught chef from an early age, and driven by the idea of opening his own restaurant, Chef Roberto Solís's career began in 2003 when he opened the doors of the restaurant Néctar. It has now reached its highest expression as a high-end restaurant, establishing itself as a gastronomic destination for visitors to Mérida. In this space, the chef has embraced his origins, remaining faithful to the history of Yucatán and its ingredients. One of the must-try dishes at this restaurant is the venison panuchos, which consist of a fried tortilla filled with beans, charred green salsa, aged Cotija cheese, and Oaxaca cheese, with the venison as the main ingredient placed on top of the tortilla.

Visit Néctar to try this and other dishes that showcase a gastronomic offer focused on the interpretation of Yucatecan cuisine.
