The Kool Kaab staff will welcome you with a warm greeting. You will learn about the great sustainable Milpa project behind Kool Kaab, the innovative concept of a mill and snack bar for Milpa products, and the goal of promoting the importance of native corn as the basis for food in pre-Hispanic and contemporary Mexico. You will also learn about this seed and its varieties in the peninsula.
We will take a tour of the mill to learn about the nixtamalization, grinding, and kneading process of corn grains to obtain the dough with which we make tortillas and snacks at Kool Kaab.
We will continue with a tasting of tortillas, explaining how they are made with native corn grains and accompanied by delicious seasonal ingredient salsas.
Finally, to get our hands on the dough, we will prepare exquisite sopes that can be enjoyed with a fresh juice, coffee, or if you prefer, a Nixta Brew, a refreshing coffee with a corn flavour.
An excellent opportunity to experience the textures and colours that corn goes through from nixtamalization, grinding, and kneading, to being served in our favourite dishes!
