Chocolomo is a delicious Yucatecan dish consisting of a broth made with beef loin, viscera, and bones, as well as pumpkin, tomato, and seasoned with spices and bitter orange that enhance the flavour of the dish, and topped with the traditional Yucatecan salpicón. According to the weekly culinary tradition, Saturday is the favourite day to enjoy this broth with intense but delicious aromas and flavours, which is usually eaten for dinner. Interestingly, the name of this dish comes from the Mayan-Spanish word: "choco" meaning hot and "lomo" meaning a piece of meat, referring to the ingredients it contains.
