Chilindrinas are empanadas made with finely chopped chaya leaves and dough. Both ingredients are mixed to form a tortilla that serves as the base of our empanada. They can be filled with either egg and pepita (traditional filling) or cheese, which melts inside when fried. They are served with tomato and onion on top as accompaniment to enhance the flavour of the empanadas. A very popular spot on the way to Teabo is "El Oasis," a roadside stall where you can find this dish usually served for breakfast. The owners say that the name of this dish comes from the small spots (pequitas) that appear when frying the empanada. This stall has been offering this delicious dish for about 15 years to anyone who wants to enjoy a tasty breakfast on their journey along the road.
