Along the Yucatan coast, you can find various tourist sites, restaurants, traditional cooks, and chefs, among others. However, if you want to experience a true technique for preparing fried fish, you can enjoy it with Javier Humberto in Celestún. He uses a technique called "seco salado," which is considered a primitive or ancestral method. Additionally, he practices artisanal fishing. To begin the preparation, the fish must be thoroughly cleaned, and necessary cuts are made. For smaller fish, 3 to 4 diagonal cuts are made, while larger fish can be cut into steaks. Then, a pinch of salt is added, and the oil is heated to a consistent temperature, which ensures that the fish remains intact and doesn't break apart during frying.
