In the town of Sinanché, you can find the Palma family, who craft various desserts with Yucatán coconut. One of them is the burnt coconut milk; this is a family recipe that has been passed down through generations, with the grandmother being the original preparer, and now it has been carried on by others. For this dessert, the coconut is cracked open and peeled, and the flesh is extracted and blended with cinnamon, sugar, egg, and cornstarch. The dessert has two layers of consistency: the top part has a caramel made from melted sugar poured into a mold to cool and harden, while the bottom part is smooth like a creamy custard.
