Tikin-Xic is an exquisite dish, famous in Yucatan. It has a very particular reddish color, a product of the delicious marinade of achiote and bitter orange. After being wrapped in a banana leaf, traditionally the grouper fish is grilled over charcoal or cooked in a wood-fired oven, served on a platter, drizzled with olive oil, and accompanied by Xni-Peek, which is a mini salad of tomato, onion, and bitter orange. Generally, the meat is shredded and eaten in tacos.
