Chef Jorge Ildefonso heads the Casona restaurant at the Los Cedros hotel in Espita. He has been in charge of creating the restaurant's menu, in which he has bet on recipes from the local cuisine, but not the typical ones; that is, a reinvention of what is found in Espita and its surroundings. All the ingredients used come from Yucatan: from Temozon the sausages and smoked meat; from San Felipe the catch of the day, from Valladolid and Espita come the fruits and vegetables. Within the boutique hotel, they have their organic garden which they use for the restaurant. Some of the chef's dishes that you can find on the menu include: San Felipe fish ceviche, oven-roasted oven roasted lechón tacos, garlic mushroom tostadas, fresh burrata from Sucila, among others.
