This seasoning is a variant of the seasoning recipes that exist in the Yucatecan recipe book. The escabeche seasoning is made with garlic, pepper, oregano, onion, chile xcatic, and clove; by integrating these ingredients, a grey paste full of aromas and flavours is created that serves as a marinade for a good piece of chicken or turkey to be grilled.
