Pib is a delicious traditional dish that is usually only prepared during the Day of the Dead festivities in November. However, if you are visiting Mérida and don't want to leave without trying this jewel of Yucatecan cuisine, you can taste a variation of this dish so you won't be left craving for it. This variation is the Pib Empanadas from Reina Itzalana, who make them with the typical ingredients of a Pib: espelón (beans), turkey, tomato, onion, sweet chilli, epazote, cabbage, and of course, Pib dough to obtain that crunchy texture that characterizes it, but in a smaller version, conserving its traditional flavour. These are fried in oil and accompanied by red tomato sauce, cabbage, and onion pickled with bitter orange. Reina Itzalana has two locations in the city of Mérida, one in the traditional market of the Santiago neighbourhood, and the other in the San Luis Chuburna neighbourhood, both operating in the afternoon. The best part is that you can enjoy them all year round!
