A delicious dough is filled with seasoned shark and beans, giving shape to the rich and popularly known “mini empanadas de cazón”. The diminutive name refers to their size, as in the port of Celestún they are made smaller than the average size. There are several cooks within the port who prepare this dish, however, among those who have been preparing it for the longest time are Doña Candi, who is the third generation in her family continuing to prepare the empanaditas, and Doña Sofia, who has been offering her seasoning to diners for 15 years. Both traditional cooks have delighted the palates of those who visit Celestún, with the flavour of their empanadas, which are accompanied by a delicious tomato-based sauce that is poured on top and blends the flavours of the fried dough, beans, and seasoned shark, a tasty combination to enjoy freshly made and warm. The shark is a very common fish along the coasts of Yucatán, and among the variety of ways to eat it, you cannot leave Celestún without trying it in mini empanadas.
