In the ecotourism park Kaalmankal, you can enjoy the experience of preparing your food in an open environment surrounded by nature, burying the food in the pib oven underground, and unearthing it when it's ready to eat. One of the most representative dishes of the state is prepared: chicken pibil. Together with the cooks Miriam and Isabel, who will guide you through the entire preparation process and explain the food, you will learn the ingredients that this dish requires, such as chicken, red recado (seasoning) with sour orange to marinate the meat, tomato, onion, sweet chilli, and epazote, which give it its characteristic flavour. Then, it will be wrapped in a banana leaf so that it can be ready to be buried underground. While the chicken pibil is cooking, you will learn to make handmade tortillas to accompany your food. When the food is cooked, you will unearth it to enjoy it along with a refreshing drink. Your table will be located in a garden with trees to provide shade and a pleasant moment with your peers.
