In Yucatan, "pimitos" is a dish made up of thick tortillas. To make them, small balls of dough are prepared with a pinch of salt and lard, and then cubed chicharra (pork crackling) is added to the dough, giving the pimitos an unparalleled flavour. The chicharra is made by frying pork meat and skin in lard and seasoning it with only salt. Once the dough is ready, the tortillas are shaped and cooked on a griddle, resulting in a thick tortilla where every bite can be tasted with the flavour of chicharra. They are usually served with the famous "chiltomate" sauce, which consists of roasting tomatoes, onion, and habanero chilli, grinding them in a molcajete (mortar and pestle), and finally adding cilantro and a pinch of salt. This sauce can be drizzled over each pimito, creating an easy but incredibly delicious recipe perfect for breakfast or as an accompaniment to any meal.
