The Cobia is a large, long, and tapered fish with a dark brown back and a silver belly, which inhabits tropical seas such as the Yucatan peninsula, although young fish can be caught all year round, they are abundant in the fall season, and it is one of the most appreciated fish by those who are dedicated to their capture since, in addition to having meat with high percentages of protein, it is delicious and with a smooth and very fine consistency, so its fillets are valued especially for their small amount of bones, which makes it easy to enjoy. There are several ways to consume this fish, but the most traditional is to eat it fried, cut into slices, to appreciate all its flavour, accompanied by tortillas and a sauce of your preference.
