There is no more traditional and popular gastronomic dish in the Janal Pixán celebrations than the famous mucbipollo. This exquisite tamale has a large and round shape, and its filling is traditionally made with chicken meat, red achiote, tomato, onion, chopped bell pepper, as well as abundant lard. Although the recipe may vary among Yucatecan families, it is common for people to add black beans, known as espelón, and k'ool, which is the special ingredient, a thick cream made from masa, as well as chicken broth and various spices that provide that unique flavour to this tamale. It is moulded by hand and once ready, it is wrapped in a banana leaf. Its name in Maya means "that which should be buried", which refers both representatively to the bodies of the deceased, as well as to its cooking method, which is done underground, which is the secret of its flavour. All of the above is traditionally carried out in the courtyards of families with a pib (hole in the ground) with red-hot wood. It is more than just a dish, it is a tradition, as it represents the offering in honour of the deceased, and is maintained thanks to the families who cook and celebrate Janal Pixán fervently every year as a ritual. It is thanks to this that it is considered a Yucatecan culinary treasure.
