For many people, the most anticipated day of the week in Yucatán is Sunday, adorned by the delicious cochinita pibil for breakfast. Early in the morning, traditionally on Sundays, you can find hundreds of stalls dedicated to preparing and selling cochinita in its various forms, such as tortas, tacos, and even panuchos. It is typically enjoyed with purple onion and habanero or ground chilli sauce. This dish is emblematic and is specifically eaten on Sundays due to tradition. Many years ago in the state, Yucatecans would slaughter their pigs on Saturdays and prepare them for Sunday breakfast since refrigeration was not available and the meat had to be used quickly. The name cochinita pibil comes from the Maya language, where "Pib" or "Pibil" refers to a cooking method involving burying the meat, which is why this dish is traditionally cooked underground.
