Pipián has its origins in pre-Hispanic times, with its main ingredient always being ground pumpkin seeds. Although it is prepared in different states of Mexico, each pipián is unique, not only in terms of its colour but also its flavour and consistency. What characterizes it in Yucatán is the addition of achiote to the pumpkin seeds, the preparation process, and the choice of protein. In the case of rabbit pipián, the rabbit meat is marinated with salt and lime, grilled, and then cut into pieces. It is then boiled in a pot with garlic cloves. Meanwhile, the pumpkin seeds are toasted, ground, and mixed with diluted red seasoning paste. Once the pipián seasoning is ready, it is strained and added to the boiling broth while stirring to prevent sticking. The meat is removed and added back to the broth along with scallions, tomatoes, epazote, salt, pepper, and habanero chilli. Finally, diluted masa (dough) is added to thicken the broth. The meat is returned to the pot for a few minutes, and when ready, it is served on a platter with the sauce and a drizzle of the oil released by the pipián. It is accompanied by white rice and handmade tortillas. Ready to enjoy!
