Pebre is a typical Yucatecan dish, and its name comes from the Mayan language: Sac K'ool, which means "Sac" (white) and "K'ool" (thick broth). The dish is presented with a base of k'ool, and the Maya octopus is roasted on top. Then, the plate is brushed with a reduction of tomato sauce and topped with the salsa. Mint leaves are added, and the octopus is bathed in tomato sauce. It is served with seared habanero chilli, and final garnishes include sprigs of mint. This dish is an innovation of the Yucatecan dish Pebre, combining it with Maya octopus instead of chicken or turkey. The Maya octopus is marinated with bitter orange, white recado (spice blend), salt, and pepper. It's worth mentioning that the k'ool is prepared with the cooking water of the octopus. You can enjoy this dish all year round at the Los Negritos restaurant, as they keep the octopus to offer it to their visitors. You must try it!
