Lucía Cosgaya from Valladolid is a traditional cook who is dedicated and committed to promoting, learning, and sharing a bit of the extensive Yucatecan gastronomy. She has participated in various state and national events, including the International Encounter of Traditional Cooks of the Mayan World, the First and Second Encounter of Traditional Cooks of Yucatán, the Festival of Life and Death in Xcaret, as well as different gatherings of cooks and gastronomic festivals in various states of Mexico. Some of the dishes she focuses on are cochinita pibil, lomitos de Valladolid, relleno negro, tamal de makulan, and espelón with lomitos, using the techniques she learned from her grandmother, who taught her how to cook in a pib (traditional underground oven). She has also participated in different experiential workshops, where she presents these dishes, sharing her passion for ancestral and traditional cuisine with everyone.
