Located in the city of Mérida, the “La Tradición” restaurant has been open to the public since 2003, founded by Chef David Cetina. He has become a representative of traditional Yucatecan cuisine, preserving ancestral cooking methods and promoting them through his dishes both inside and outside his restaurant. The menu focuses being Yucatecan flavours. One of the options to try is the garnachas, which are made from nixtamalized corn and can be ordered with two different fillings: Tzic, filled with venison cooked in a pib (underground oven) and shredded with bitter orange dressing, or Cochinita Pibil, also cooked in a pib and served with pickled purple onion. The menu also includes Yucatecan soups, appetizers, specialties, and desserts, providing an authentic experience that takes you back to the true flavours and cooking techniques of proteins in the pib.
