This typical sweet from Yucatán is made from plums. To prepare this delicacy, the fruit is soaked in water to eliminate its slight acidity. Then, water is boiled in a pot with cinnamon, sugar or piloncillo, and the plums are added. After twenty minutes, they are removed from the pot and pierced with a fork to absorb the sweet syrup. They are then returned to the pot and simmered for approximately three hours. This sweet is characterized by its dark colour and large size, obtained from absorbing the sweet syrup.
