Birza is a dessert that originated on the beach of Dzilam de Bravo, thanks to Mr. José Montejo, a street vendor of ice cream and marquesitas for many years, selling his products along the entire coast. It was in the port of Dzilam de Bravo where one of his customers asked him to combine the marquesita with ice cream, giving birth to the "marquihelado," which he named "Birza" after the customer who made the request. This dessert is prepared with the same mixture as the marquesita cone, but before rolling it up, it is spread with Edam cheese. Using a wooden cone-shaped mold, it is rolled to give it a cone-like shape, allowing the coconut ice cream and more Edam cheese to be added inside. Enjoy this delightful creation that you will love!
