The restaurant Los Almendros offers you a traditional house dish called "pavo en alcaparras" (turkey in capers), which is made with turkey slices cooked in k'óol sauce made from wine and lime juice. First, water, oil, a garlic clove, and the turkey slices are placed in a pot over medium heat and cooked. Once cooked, the turkey is removed and shredded. Meanwhile, in a skillet, green bell pepper and diced onion are fried with butter, salt, and garlic, and then added to the pot with the shredded meat. Everything is mixed well to incorporate the flavours. A tomato sauce is prepared with capers and chilli, which is added to the pot. Finally, the k'óol sauce is made with flour, water, wine, and lime juice, mixing well until it thickens. You can enjoy this delight with homemade tomato sauce and handmade corn tortillas.
