Yuca fritters are fried balls made from yuca flour. They have a soft and fluffy texture with a hollow centre. Traditionally, they are split in half and bathed in honey, both inside and outside, and that's how they are typically enjoyed. It is a custom to distribute them during the celebrations for the deceased, due to the yuca season. Yuca is a woody shrub, and for the fritter recipe, it is cut into large pieces and cooked in a pot with plenty of water until it becomes tender enough to be mashed and mixed with the other ingredients: flour, butter, eggs, and salt. The resulting dough is formed into medium-sized balls and fried in oil until golden brown.
