Lechón al horno” is a traditional dish of the region that requires several hours of preparation. It is made with pork leg seasoned with cloves, oregano, bay leaf, black pepper, Tabasco pepper, garlic, salt, and bitter orange. To prepare it, all the ingredients are blended with orange juice to create the marinade for the pork leg, which is then soaked in the marinade on a tray for a few minutes. Afterwards, it is placed in the oven covered with aluminium foil for several hours, and then the foil is removed and it is cooked for a few more minutes. This final step allows the top of the meat to become crispy and have a sweet appearance. Enjoy this unique dish accompanied by pico de gallo, either in a sandwich or tacos, you will love it!
