Papadzules is a traditional dish of Mayan origin in Yucatecan cuisine. The name means, according to the Mayans, "food of gentlemen" (papa: food, and Ts'uul: lord or gentleman). It is a relatively simple dish that consists of corn tortillas filled with sliced hard-boiled egg (like tacos), bathed in a green pumpkin seed sauce and tomato sauce on top with habanero chili. They are served on a plate with two, three, or four papadzules next to each other so that you can add tomato sauce to your liking. To enhance the flavor, the sauces are served slightly hot.
