The Kibi sandwich is a mix of a snack with a traditional sandwich, which became an exclusive breakfast dish of Progreso for over 30 years. Recently, it gained greater impact after being popularized by a song dedicated to this dish by a food street vendor looking to promote their business. To make the Kibi sandwich, a loaf of bread is used. Although wheat is the base of Kibi, it has been regionalized in Yucatan by filling it with Edam cheese, Oaxaca cheese, pork crackling, shrimp, and even chorizo. However, originally Kibi is filled with cabbage and pieces of habanero chilli. Dare to try this peculiar dish, which continues to create new variations with different fillings.
