At the Yaxunah tourist stop, you can participate in the preparation of a typical seasoning for Yucatecan cuisine, which is the red recado, used to prepare the chicken pibil, which is cooked in an underground pib oven. There are different types of seasonings used in the region, each for seasoning different dishes. In this experience, they will explain in detail the importance of recados and show you step by step how to make them. The six basic ingredients of recados are: cloves, black pepper, Tabasco pepper, toasted garlic, cinnamon, and oregano; in the case of the red recado, annatto is added. All these ingredients are ground in a traditional metate to obtain the final product. Don't miss the opportunity to learn about this important process in Yucatecan cuisine and live the experience in this Mayan community.
