Espelon Vaporcitos, also known as "tamales torteados," are delicious steamed tamales. Espelon or xpéelon is a type of new bean, which is previously soaked in salt water, and then mixed with the dough so that the beans are evenly distributed. The vaporcitos are formed on a banana leaf, wrapped in it, and placed in a steamer to cook. To serve, they are placed on a platter without the banana leaf and accompanied by a delicious tomato sauce. The most representative season is in November, and they are commonly found during the Day of the Dead festivities.
