New Aak' Sá atole is a drink made from corn that is consumed freshly made, usually hot, and can be either sweet or salty. It is traditionally served in jicaras, and is often accompanied by boiled tender corn. The preparation of atole takes about eight hours and is based on the star ingredient, corn. The process is simple but due to the duration of preparation, it must be started the day before. It is usually consumed during the month of May when farmers offer it to the Mayan rain god, and also during the prayer in honour of the God who has allowed them to have a successful harvest and the land that has been good to them. Similarly, it is prepared for the Day of the Dead (November), as it is presented on the altars of the deceased during these festivities.
