The Tzic Venison is an ancestral dish of Yucatecan cuisine, honouring the traditions of the ancient Mayas, who incorporated wild animal meat into their diet. It is prepared with shredded deer meat, seasoned with salt, bitter orange juice, cilantro, onion, and is eaten accompanied by corn tortillas, strained black beans, and habanero sauce. Tradition dictates that Thursdays are the preferred day to consume this dish, from ancient times when hunting and consuming deer were common. However, it is important to note that deer is currently a threatened species, and establishments must prove that the meat comes from an authorized Environmental Management Unit (UMA) with a legal purchase invoice to commercialize it and promote responsible consumption.
