This drink is characteristic of the eastern and milpa area of Yucatan. Xcaita is a type of squash, which is planted by farmers at the same time as corn, so it can be harvested during the months of August and September, when the squash can already be seen as green and soft. For this drink, the xcaita is cut into small cubes, while the corn is peeled, cleaned, and the kernels are cut off, since it is a very tender corn and cannot be shucked.
