One of the delicacies you can find in Yucatan are castacán sandwiches. This meat is obtained from a cut in the belly of the hairless pig, which is previously fed only on huaxin forage and corn, to give it that flavour, colour, and texture that characterises it. One of the places where you can find this sandwich is at Wayané, founded in 1991, and for thirty years they have been preparing the castacán sandwich, to which they later added cheese, which was the ingredient that led to the success of the sandwich, as people began asking for this dish, which they also started preparing with egg. Currently, Wayané has 31 daily dishes at its four locations, but the favourite is still the castacán with cheese. Go and try these delicious sandwiches to start your day, the meat mixed with melted cheese will make you enjoy every bite.
