The tamal chachak waaj gets its name from the Mayan language, with "cha" meaning to cook, "chak" which means red, and "waaj" tortilla or bread. Therefore, the chachak waaj is a red tamale, as one of its most important ingredients is achiote. It is highly representative of Yucatecan cuisine and incorporates other ingredients such as pork lard, chicken or pork meat, epazote, tomato, k'ool (white sauce similar to bechamel), boiled egg, and seasonings. To give the tamale its shape, a circle is created with the dough that wraps the filling ingredients (k'ool, meat, a slice of boiled egg, and epazote), all wrapped in a banana leaf to be cooked in the pib (earth oven), which gives it its special flavour. Once ready, it is served hot and can be accompanied by spicy tomato sauce, which is the perfect complement.
