The Mango Flavor Restaurant is located in the heart of Cholul, a district that preserves Yucatecan culture and traditions. The restaurant offers a creative international cuisine proposal with Yucatecan influences and local ingredients. The façade of the restaurant showcases an architecture that embraces the history of downtown Cholul, with over 100 years of construction. The "laqueado negro" is a dish that emerged from the attempt to combine Yucatecan ingredients with Asian flavors and techniques. The use of pork in the region was crucial in deciding the protein for this dish. The rest of the ingredients gradually came together to create this dish that, for the restaurant and the chef, enhances and celebrates Yucatecan culture. It consists of pork shank lacquered in a sauce made from "recado negro" (a Yucatecan spice blend), mango, and habanero, accompanied by grilled roasted guacamole and baby corn. The umami flavours and textures in each of its ingredients, along with its perfect execution, result in a Mayan fusion dish.
