Melcocha is a handmade candy that you can find in the traditional markets of the State of Yucatán. It is made with sugar, honey, egg whites, butter, vanilla extract, anise, and either mint or lemon peel. All the ingredients are mixed and placed in a wood-fired pot to cook over high heat. The time it takes to form the mixture and its consistency is lengthy; it takes approximately four hours of beating the mixture until it reaches a chewy consistency that can be stretched and moulded like a tortilla. Originally, it was wrapped in almond, guava, or orange leaves, but nowadays plastic is used. Melcocha has evolved, and now you can find it with peanuts, mint extract, anise, lemon, pumpkin seeds, or vanilla. Try some of its variations!
